Origins if Wine: Ancient Wine Techniques in Contemporary Wine Making

Join us of this educational tasting experience with Arterra Wines Owner and Winemaker, Jason Murray, and certified sommelier, Dale Clemence. During this experience you will try a variety of different wines from around the world; from wines produced in the Republic of Georgia using only the most ancient techniques; to contemporary wines utilizing these ancient principles but applied to modern capabilities. Discussions will include techniques dating back to 6000BC such as: Ancient vessels, Qvevri & Amphora, their uses & influence on wine; Comparisons of ancient vessels and barrels; History of Sulfite in Winemaking; Ancient & Contemporary practices of Native Yeast fermentations. Jason will present how Native Yeast is different, why he uses it, why commercial yeasts came about and how they influence wines. Resulting styles of wine from these various techniques will be conveyed and tasted.
